Cadbury Mini Egg Cookies

I love M&M cookies, but when I saw Cadbury Mini Eggs at the store today, so I thought I’d try to change up my usual cookies for something a little different. My daughter loves Cadbury Mini Eggs so I thought she’d enjoy these. The recipe is pretty basic and you probably already have most of this in your pantry which makes these cookies even better:)

Cadbury Mini Egg Cookies

  • 3/4 cup of Crisco
  • 1 1/4 cup of brown sugar
  • 2 teaspoons of pure vanilla extract
  • 2 tablespoons of milk
  • 1 egg
  • 3/4 teaspoon of baking soda
  • 1 teaspoon of salt
  • 2 cups of flour
  • 1 cup of Cadbury Mini Eggs (smashed)
  • Optional: Flake Salt

Preheat oven to 350. Mix together Crisco and brown sugar. Add in vanilla extract, milk, and egg and mix until blended. Add in baking soda and salt and give a quick stir. Slowly add in flour. In freezer bag pour Cadbury Mini Eggs and smash until preferred size. (I used a KitchenAid Meat Tenderizer to do this.) Gently stir into the cookie mixture. Using a small cookie scoop place dough on an ungreased cookie sheet. Bake for 10-12 minutes. As soon as they come out of the oven sprinkle a tiny amount of flake salt over the top, and transfer to a cooling rack. This recipe will make 2 dozen cookies. Enjoy!
